I love cucumbers! I have tried many cucumber recipes and this Asian Cucumber Salad is one of my favorites! Fresh, crunchy cucumber with onion tossed in a simple Asian dressing. This Asian cucumber salad is the perfect summer side dish for any meal!

This Asian cucumber salad is delicious! This has a sweet and tangy taste. To make this refreshing salad, all you need are just a couple of simple ingredients that I’m sure you already have on hand. Simply mix everything and serve.

The simple Asian dressing brings this salad to heights! It is the heart of this salad. It gives life to the cucumber, yet doesn’t overpower the veggies. To make the dressing, you need just five ingredients (rice wine vinegar, sesame oil, soy sauce, sugar, and chili flakes). I love a little heat so I add a bit more of the chili flakes, but you can omit it if desired.

I’m sure your family will love this Asian cucumber salad. It’s a fun, delicious twist to your salad variations. It’s super refreshing, easy, and quick to whip up with tangy and sweet flavor and just a hint of heat.

Ingredients

⅓ c. Green Onion, chopped

2 English CucumberS sliced

2 tbsp Toasted Sesame Seeds

1 Red onion, sliced

Asian Salad Dressing:

1 tbsp Soy Sauce

2 tbsp Sugar

2 tbsp Rice Vinegar

¼ tsp Red Chilli Flakes

½ tsp Toasted Sesame Oil

How to make Asian Cucumber Salad

Step 1: Combine the salad dressing ingredients. Adjust the seasoning according to taste. Feel free to add a little more sugar if the dressing is too sour or salty.

Step 2: Place the cucumber, onion, chopped green onion, and sesame seeds in a big salad bowl.

Step 3: Drizzle the dressing on top and toss well.

Step 4: Serve the salad right away. Enjoy!
