Ingredients
1/4 c. Pepperjack cheese, shredded
1 pound Boneless, skinless chicken breast, cut into 4 – 4-oz.pieces
4 tbsp cream cheese
4 to 8 pieces of bacon
2 tbsp green onion, chopped
How to make Bacon Wrapped Cream Cheese Stuffed Chicken Breast
Step 1: Into 4 equal size pieces, cut the chicken. Then, pound them into about 1/4-inch thickness.
Step 2: Combine the softened cream cheese, chopped green onion, and pepper jack cheese until well-mixed. Into the middle of each piece of chicken, place 1/4 of the mixture.
Step 3: Roll the chicken, breast up, beginning at the long side, making sure to keep the cheese mixture in the center.
Step 4: Around the chicken breast, wrap 1 to 2 slices of bacon and secure with a toothpick if needed.
Step 5: Put the chicken on a baking sheet with an edge or a baking dish. Bake in the oven for about 30 minutes at 375 degrees F.
Step 6: To completely brown and crisp the bacon, broil the topside for about 5 minutes. Flip and broil for additional 3 minutes or until the bottom side has crisped up.
Step 7: Remove from the oven when done and serve right away. Enjoy!
Notes:
You can use 1 to 2 pieces of bacon to wrap the chicken.
To have 4 ounces pieces of chicken, cut each half of 1 large chicken breast (that has been cut in half).
You are welcome to baste the chicken during baking with any of your favorite grilling sauce marinade, chili sauce, or sweet and sour sauce.
