Baked Potato Slices

I am obsessed with these baked potato slices! They are topped with tons of gooey cheese, crispy bacon, and Italian seasoning. I love serving these with sour cream for dipping.

Ingredients

6 slices bacon, uncooked
3 russet potatoes, Scrubbed clean
2 green onions, diced
2.5 c. cheddar cheese, shredded
1 tbsp Italian Seasoning
1 tbsp vegetable oil, Canola, or Olive Oil works as well
Salt/Pepper, to taste

How to make Baked Potato Slices

Step 1: Prepare the oven. Preheat it to 375 degrees. Five minutes before using, take the bacon out.

Step 2: Into about half-inch slices, slice the potatoes and lightly coat the tops with oil using a pastry brush. Flip and coat the other side. Sprinkle with salt and pepper.

Step 3: On a baking sheet, arrange the potato slices and bake for about 25 minutes.

Step 4: In the meantime, cook the bacon on low heat. Flip the bacon using kitchen tongs often for even cooking. Set the bacon aside when done, leaving the bacon drippings in the pan.

Step 5: Take the potato slices out of the oven and lightly brush them with the bacon drippings. Flip and do the same on the other side. Return to the oven and bake for another 10 minutes.

Step 6: Adjust the oven temperature to 350 degrees. On top of the potatoes, sprinkle the grated cheese and crumbled bacon. Resume baking for another 5 minutes or until the cheese has melted.

Step 7: Garnish the baked potato slice with Italian seasoning and green onions. Enjoy right away with sour cream!

Notes:

For this recipe, you can also use Monterrey Jack.

You can also top the potato slices with steamed broccoli instead of bacon.

Sprinkle the potato slices with Ranch seasoning in place of Italian seasoning.

Storage:

In an airtight container, keep the potato slices and store them in the fridge for up to 3 to 4 days. Reheat for 6 minutes at 350 degrees F oven until warmed through.

These potato slices also freeze well. Bake for 8 to 10 minutes at 325 degrees F until heated through.
