Delicious and super easy to whip up! These light golden-brown broccoli fritters are a delicious vegetarian meal that you can easily throw together in less than thirty minutes. So good, even you fussiest eaters will love these!
These are fried fritters, but you can bake these as well if desired. Either option will yield amazing results! Pair this healthy, tender, and tasty fritters with yogurt or a cool dollop of sour cream for a filling vegetarian meal that everyone will ask for over and over again!
INGREDIENTS
2 jumbo eggs
1 pound steamed broccoli florets
½ c. shredded Parmesan cheese
1 garlic clove, minced
4 tablespoons flour
vegetable oil, for frying
salt and pepper, to taste
HOW TO MAKE BASIC BROCCOLI FRITTERS
Step 1: In a medium-sized pot, bring salted water to a boil. Then, add the broccoli florets and cook for about 5 minutes or until just fork-tender. Drain when done and place the broccoli on a cutting board. Cut the broccoli into very small pieces using a large, sharp knife.
Step 2: Place the chopped broccoli, eggs, Parmesan, flour, and garlic in a medium-sized bowl. Mix well and season with salt and pepper. Mix again until everything is combined.
Step 3: Heat a cast iron or non-stick pan over medium heat. Once hot, add the oil and swirl to coat the bottom of the pan. Into the pan, scoop out 2 to 3 tbsp mounds of the broccoli mixture. Using a spatula, slightly flatten the mounds, spacing the mounds to about 1 inch apart.
Step 4: Cook the fritters for about 2 to 3 minutes on the first side. Flip and continue to cook for another 1 to 2 minutes or until all sides are golden brown and completely cooked.
Step 5: Serve the fritters right away with sour cream or yogurt. Enjoy!
NOTE:
You can also bake the fritters, simply prepare the fritters and arrange them on a hot, oven-safe skillet. Bake for about 10 to 13 minutes in a preheated 425 degrees F oven.
