I have been making this cabbage casserole for years! And my family still loves this the same. This is insanely easy to prep using just a couple of simple ingredients. This cabbage casserole has been my family’s favorite cozy winter treat. Even my fussiest eaters love this cabbage casserole!
Ingredients
1/4 c. all-purpose flour
4 large eggs
1/4 c. mayonnaise
1/2 teaspoon cornstarch
1/2 teaspoon baking powder
1 pound green cabbage, (1/2 medium head or 6 c. finely sliced)
1/4 c. sour cream
2 tablespoons dill, fresh or frozen, chopped
4 ounces mozzarella cheese, (1 1/2 c. shredded)
1/2 teaspoon salt
2 tablespoons green onion, finely chopped, plus more to garnish
How to make Cabbage Casserole
Step 1: Prepare the oven. Preheat it to 375 degrees F. Using butter, grease a 9-inch round pie dish.
Step 2: Place 4 eggs in a medium mixing bowl. Add 1/4 c. sour cream and 1/4 c. mayo. Mix well until combined.
Step 3: Combine 1/4 c. flour. Half tsp baking powder, and half tsp cornstarch in a small mixing bowl. Into the batter, whisk the flour mixture until smooth.
Step 4: Into a second medium mixing bowl, place the thinly sliced cabbage and sprinkle with half a tsp salt. To soften, scrunch the cabbage for about 30 seconds. Add 2 tbsp green onions and 2 tbsp dill. Mix well.
Step 5: Over the bottom of the prepared pie dish, spread the cabbage mixture. On top, evenly pour the batter and sprinkle with the shredded mozzarella.
Step 6: Place on the middle rack of the preheated oven and bake for about 35 minutes or until the top of the casserole is golden.
