Cheesy Broccoli Quinoa Casserole

Healthy, super cheesy, and the best casserole packed with fresh broccoli florets and protein-packed quinoa in a simple homemade sauce.

Ingredients

2 tbsp butter

6 cloves garlic, minced

2 c. water or low sodium broth – for cooking quinoa

4 c. fresh broccoli florets

1 c. uncooked quinoa – I prefer Ancient Harvest

1 1/2 c. chopped yellow onion

2 tbsp oat flour – or use all-purpose

8 ounces block of good quality cheddar cheese, divided

1 c. milk – I used unsweetened almond milk

1/2 tsp garlic powder

1 tsp sea salt

1 tsp ground pepper

How to make Cheesy Broccoli Quinoa Casserole

Step 1: Using a non-stick spray, lightly grease a casserole dish (in this recipe, I used an 8 x 8-inch square dish). Set aside.

Step 2: Following the package directions, prepare the quinoa using broth or water. You should have about 3 cups of cooked, fluffy quinoa. In a large mixing bowl, Place the cooked quinoa.

Step 3: In the meantime, steam the broccoli for about 5 to 6 minutes until crisp tender, and bright green.

Step 4: Using a food processor with the shredding attachment, shred the cheese. You can also do this with a handheld grater.

Step 5: Prepare the oven. Preheat it to 350 degrees F.

Step 6: In a medium saucepan, melt the butter on medium heat. Once melted, add the onion and garlic. Saute for about 7 minutes until tender and aromatic. Place the milk, flour, garlic powder, salt, and pepper in a small bowl or measuring cup. Mix well until blended, then pour this into the saucepan. Let the sauce simmer for about 5 minutes while stirring constantly until the sauce has thickened. Take off the heat and add in 2 cups shredded cheddar. Stir well until melted.

Step 7: Over the quinoa and broccoli, pour the cheese sauce. Mix well, then pour everything into the prepared baking dish. On top, sprinkle the rest of the shredded cheese.

Step 8: Place in the preheated oven and bake for about 15 minutes or until the casserole is completely heated and the cheese has melted.

Step 9: Serve the Cheesy Broccoli Quinoa Casserole immediately. Enjoy!
