Chicken Souvlaki

Tender and flavorful pieces of chicken served with a side of grilled pita. This Chicken Souvlaki is a delicious Mediterranean dish that is a must on your summer BBQ menu!

Ingredients

Chicken Souvlaki:

1 tablespoon garlic (about 4-5 garlic cloves, fresh minced)

3 tablespoons olive oil

1.5 pounds chicken (3-4 boneless breasts or 12-14 chicken tenders)

tablespoons dried or a mix of both)

1/2 teaspoon chili flakes

3 tablespoons oregano (fresh leaves or 1.5

1/2 teaspoon salt

1/4 teaspoon black pepper (freshly cracked)

1/4 c. lemon (juice, about 1 large lemon’s juice)

1/2 teaspoon cumin powder

2 tablespoons parsley (fresh leaves, chopped)

Grilled Pita – for serving, optional

Pita bread

How to make Chicken Souvlaki

Step 1: In a wide bowl with a lid or sealable bag, place all the ingredients except for the chicken. Mix well to make the Souvlaki marinade. Set aside.

Step 2: Into small 1 to 2 pieces, slice the chicken breasts. Toss the pieces into the marinade. Cover the bowl or close the bag. Place in the fridge to marinate the chicken for about 20 to 30 minutes or overnight.

Note: If desired, use chicken tenders or slice chicken breasts into small strips about 2 inches long and half an inch wide. Place the pieces on a tray and cover them with plastic wrap. To make even sizes, slightly pound the chicken.

Step 3: If grilling, preheat the grill. Into the skewers, skew the marinated chicken. Grill until all sides are cooked through.

Step 4: To serve with grilled pita, spray oil on the grill. Grill the pita bread for 30 seconds to 1 minute until nice grill marks appear on both sides. Serve the grilled pita on the side with chicken Souvlaki. Enjoy!

Notes:

Tips for grilling:

For proper handling on the grill, leave a bit of space towards the handle of the skewers.

To prevent the wooden skewers from quickly burning on the grill, pre-soak them in water. Using aluminum foil, cover the tips of the skewers.

To make it in the oven, start by preheating the oven. On a sheet lined with foil/parchment, place the skewers. Set the oven to broil and cook for about 5 to 7 minutes per side until the kabobs are cooked through.
