Chicken Souvlaki

This Chicken Souvlaki is a favorite at home. It’s a gluten-free recipe that’s excellent to serve with a side of salad or rice, even pita.

Ingredients

3 tablespoons Olive Oil

1.5 pounds Chicken (3-4 boneless breasts or 12-14 chicken tenders)

1 tablespoon Garlic (about 4-5 garlic cloves, fresh minced)

1/4 c. Lemon (juice, about 1 large lemon’s juice)

1/2 teaspoon Cumin Powder

3 tablespoons Oregano (fresh leaves, or 1.5 tablespoons dried, or mix half-half)

2 tablespoons Parsley (fresh leaves, chopped)

1/2 teaspoon Chili Flakes

1/4 teaspoon Black Pepper (freshly cracked)

1/2 teaspoon Salt

Grilled Pita, for Serving (optional)

Pita Bread

Oil Spray

How to make Chicken Souvlaki

Step 1: To make the Souvlaki Marinade, place all the ingredients in a wide bowl with a lid or in a sealable bag except the chicken. Stir well and keep it aside.

Step 2: Into small 1 to 2-inch pieces, slice the chicken breast. Toss them into the marinade to coat. Tent with the lid or close the bag and place in the fridge until ready to use. You can also marinate the chicken for at least 20 to 30 minutes if short in time.

Note: Feel free to use chicken tenders or slice the chicken breast into small (2-inch long, 1 to 2-inch wide) strips. Arrange them on a tray and cover them with a piece of plastic wrap. Pound the chicken into even sizes.

Step 3: If grilling the chicken, preheat the grill and skew the marinated chicken into the skewers. Grill the chicken until all sides are completely cooked.

Step 4: Grill the pita bread on an oiled grill for about 30 seconds to 1 minute per side until nice grill marks appear on both sides. Serve the pita alongside Chicken Souvlaki. Enjoy!

Notes:

Make sure to leave a bit of space on the handle of the skewers for proper handling on the grill.

Soak the wooden skewers so they will not burn quickly when grilling. I suggest covering the tips with aluminum foil to prevent burning while grilling.

You can also make this in the oven. On a sheet lined with foil/parchment, place the skewers and set the oven to broil. Broil the Chicken Souvlaki for about 5 to 7 minutes per side until completely cooked.
