Succulent chicken breasts with spinach and mushrooms smothered in a creamy Parmesan sauce. This is an easy and quick dinner excellent, even for entertaining!
Ingredients
4 chicken breasts, halved crosswise
2 tbsp olive oil, (divided)
4 tbsp butter, (divided)
10 ounces Cremini mushrooms, (1 package) sliced
Salt and pepper to taste
Creamy Parmesan Sauce:
1 tbsp wheat flour
1 c. chicken broth
4 cloves garlic, minced
1 c. heavy cream
½ c. grated Parmesan cheese
1 tsp garlic powder
1 c. spinach
½ tsp salt
¼ tsp black pepper
How to make Chicken with Spinach and Mushrooms in Creamy Parmesan Sauce
On a large plate, place the chicken breasts and season with salt and pepper. Set aside.
Heat 1 tbsp each of olive oil and butter in a large skillet over medium-high heat. Once the butter is melted, add the chicken and sear for about 4 minutes per side until browned. Set aside on a plate.
In the now-empty pan, add the sliced mushrooms and the rest of the olive oil and butter. Saute for about 5 minutes or until the mushrooms are moist and dark. Set aside when done.
For the sauce, add the rest of the butter to the same pan. Once melted, add the garlic and cook for a few minutes until a little browned. Stir in 1 tbsp of flour until the raw smell is gone. Next, gradually add the chicken broth and heavy cream. Let it simmer, then add the Parmesan cheese. Stir and cook for another 2 to 3 minutes until blended. Season with salt, garlic powder, and pepper.
Throw in the spinach and let it wilt.
Add the mushrooms and stir well.
Then, return the cooked chicken to the pan and let it cook for another 2 to 3 minutes with the lid on.
Serve right away and do not forget to spoon the sauce over the chicken. Enjoy!
