Healthy and delicious! These chicken, zucchini, and fresh corn burgers are excellent burgers that your entire family will love!
Ingredients
Greek yogurt sauce:
1 tbsp olive oil
1 c. Greek yogurt
2 garlic cloves, minced
½ tsp salt
2 tsp grated lemon zest
2 tbsp fresh lemon juice
Burgers:
olive oil for searing
3 garlic cloves, minced
1 pound ground chicken
1 medium zucchini, coarsely chopped
½ medium red bell pepper, finely diced
1 tsp ground coriander
1 large egg, lightly beaten
3 green onions, thinly sliced
½ c. panko bread crumbs
2 tbsp chopped cilantro
1 tsp ground cumin
1 tsp salt
½ tsp freshly ground black pepper about 3-4 tbsp
1 ear of fresh corn husks and silk removed and kernels cut from the cob
Tomato-Cucumber Relish:
1 clove garlic, minced
1 pint cherry or grape tomatoes, quartered
2 green onions, finely sliced
¼ c. finely chopped fresh cilantro
⅓ medium seedless English cucumber, finely diced
Pinch of salt
zest of 1 lemon
2 tbsp fresh lemon juice
How to make Chicken, Zucchini, and Fresh Corn Burgers
Step 1: In a small bowl, whisk the Greek yogurt sauce ingredients and keep them in the fridge.
Step 2: Prepare the oven. Preheat it to 425 degrees.
Step 3: Combine the burger ingredients in a large bowl except for the oil. Mix using your hands and shape the mixture into your preferred patty sizes.
Step 4: To In a large frying pan, pour enough oil to cover the bottom. Heat the oil on medium heat. Then, add the burgers and sear for about 2 minutes on each side until golden brown.
Step 5: To a baking sheet, transfer the seared burgers. Place in the preheated oven and bake for about 7 to 10 minutes or until completely cooked.
Step 6: In the meantime, mix the tomato-cucumber relish in a medium size bowl until well combined.
Step 7: Serve these burgers right away with Homemade Flour Tortillas and spread with a little hummus. You can also serve these burgers with pita bread, basmati rice, mashed potatoes, pasta, etc. Enjoy!
