CHOCOLATE BROWNIE COOKIES

Soft, chewy, and fudgy – these chocolate brownie cookies are no doubt the best! Super easy to whip up and requires just a couple of simple ingredients to make.

INGREDIENTS

65 grams butter (1/4 c. + 1 teaspoon or 2.5 ounces)

225 grams dark chocolate (50% – 70% cacao) (8 ounces)

1 teaspoon baking powder

100 grams of all-purpose flour (3/4 c.)

2 eggs

80 grams packed brown sugar (1/3 c.)

80 grams sugar (3/8 c.)

HOW TO MAKE CHOCOLATE BROWNIE COOKIES

Step 1: Melt the chocolate and butter in the microwave or on the stove. Once melted, stir and let it cool to room temperature. In the meantime, line two baking sheets or cookie sheets with parchment paper.

Step 2: Place the all-purpose flour, baking powder, and a pinch of salt in a small bowl. Mix well until combined.

Step 3: Using an electric mixer, beat the eggs, and white and brown sugar in a large bowl or the bowl of a stand mixer until nice and pale. This takes about 3 minutes. Then, add the cooled melted chocolate and butter and mix well until blended. Slowly add in the dry ingredients while the mixer is still running until you have a thick mixture.

Step 4: In a bowl, leave the cookie dough and tent using plastic wrap or cling film. Let it sit in the fridge for at least 1 to 2 hours up to overnight or in the freezer for 30 minutes.

Step 5: Prepare the oven. Preheat it to 180 degrees C or 350 degrees F.

Step 6: Scoop the dough using a small ice cream scoop and shape it into a walnut-sized ball about 1 inch (or 2.5 cm/20 g). On the prepared baking sheets, place the cookies, leaving enough space between each piece. To prevent the cookies from rolling, gently press them down.

Step 7: On the middle rack of the preheated oven, place the baking sheet. Bake the cookies for about 8 to 10 minutes. If using a fan, or assisted oven, baked at 165 degrees C or 330 degrees F for about 8 to 10 minutes.

Step 8: Remove from the oven when done and transfer the cookies to a wire rack to cool. Once completely cooled, serve or keep the cookies in a cookie box for up to 14 days. Enjoy!
