This simple corn casserole complements any meal. I love how I can easily and quickly throws this together using just a couple of ingredients. And this recipe is incredibly versatile. It’s hard to mess up! I love pairing this up with baked chicken, meatloaf, roast, and other hearty dishes.
This corn casserole is seriously creamy and buttery. Almost like a corn pudding. This casserole is also great to make ahead. After mixing the casserole, tent it with plastic wrap, and keep it in the fridge until ready to bake. Make sure to take it out of the fridge thirty minutes before baking. Pop in the oven and serve with your favorite meal!
Ingredients
1 stick butter, melted
1 can(s) creamed style corn
1/4 c. diced green pepper
1/2 c. shredded cheddar cheese
4 tbsp all-purpose flour (4 heaping tbsp)
3 tbsp sugar
1 can(s) whole kernel corn, drained
1/4 tsp salt and pepper
2 eggs, beaten
1 c. whole milk
HOW TO MAKE CORN CASSEROLE
Place the whole-kernel corn, creamed-style corn, diced green pepper, eggs, whole milk, cheddar cheese, flour, sugar, and butter in a mixing bowl. Season with salt and pepper. Mix well until combined.
Into a lightly greased casserole dish, transfer the mixture.
Bake at 350 degrees F (175 degrees C) for about 1 hour and 20 minutes.
Once done, take the casserole out of the oven and let it cool for at least 5 minutes at room temperature before serving. Enjoy!
