More cheese, more cheese, and even more cheese! That’s the key ingredient in this delicious baked chicken dish that comes out crispy and cheesy.
This amazing dish is easily made with pieces of tender chicken breasts coated in a cheesy crumb crust, then baked until golden and crispy. Serve the simple chicken gravy on the side or pour it over the chicken.
INGREDIENTS
1 tsp dried parsley
1 tsp garlic powder
2 pounds of boneless, skinless chicken tenders or breasts
2 sleeves butter crackers, such as Ritz
1 1/2 c. cheddar cheese, grated
2 tbsp milk
2 eggs, beaten
1/2 tsp salt
1/4 tsp black pepper
Sauce:
2 tbsp sour cream
2 tbsp butter
Milk, as needed
1 can cream of chicken soup
How to make Crispy Cheddar Chicken
Prepare the oven. Preheat it to 400 degrees F. Using a nonstick spray, grease a 9 x 13-inch baking pan.
Into two or three large pieces, slice the chicken breasts.
In a food processor, blend the cheese, garlic powder, salt, pepper, and parsley until fine crumbs.
In a small bowl, whisk the milk and eggs.
Place the cheese/cracker mixture in another bowl. Mix well until combined.
In the egg mixture, dip the chicken pieces. Then, coat in the cracker mix. Finally, press the chicken pieces in the crumbs until evenly coated.
On the chicken, spray a thin coating of cooking spray. Into the prepared pan, place the chicken. Bake in the preheated oven for about 20 minutes. Tent with foil and continue baking for another 10 minutes or until the chicken is golden brown and crispy.
In the meantime, melt the butter with chicken soup in a saucepan. You are welcome to add milk to reach your preferred consistency.
