If you are looking for another amazing addition to your weeknight dinner rotation, this Dorito Casserole is a must! This has layers of ground beef, corn, and cheese, seasoned with savory taco spices! To top it all off, crushed Dorito chips are added as the final layer. Your kids will surely go crazy over this delicious casserole!
INGREDIENTS
1 tsp minced garlic
1 lb lean ground beef
½ yellow onion, diced
1 packet of taco seasoning
2 c. finely crushed Doritos
1 c. loosely crushed Doritos
14.5 oz. can petite diced tomatoes with green chilies NOT drained
1 c. sour cream
3 c. Mexican blend cheese
12 oz. bag of frozen corn
Sliced green onions, diced tomatoes, shredded lettuce, avocado, and sour cream for garnish (optional)
1 cup black beans – optional
HOW TO MAKE DORITO CASSEROLE RECIPE
Step 1: Prepare the oven. Preheat it to 350 degrees. Using a nonstick spray, grease a 9 x 13-inch dish.
Step 2: In the meantime, gently crush the chips (2 c. finely crushed like bread crumbs and 1 c. large chunks). Set aside.
Step 3: Cook the ground beef and onions in a large skillet. When done, drain the excess grease. Next, add the garlic and continue to cook for another minute.
Step 4: Then, add the frozen corn along with the taco seasoning, tomatoes with chiles, and two cups of finely crushed chips. If desired, you can also add some black beans.
Step 5: Take the skillet off the heat and stir in the sour cream and two cups of cheese.
Step 6: Into the prepared casserole dish, transfer everything. Place in the preheated oven and bake for about 5 minutes or until the casserole is warmed through.
Step 7: On top, add 1 c. of cheese, followed by 1 c of the loosely crushed Doritos. Return to the oven and resume baking for additional 5 minutes or until the cheese has melted.
Step 8: When done, remove the casserole from the oven and serve immediately. Enjoy!
