Easy Cheesy Zucchini Casserole

I have plenty of fresh produce, and I know one excellent recipe to use them all up! This easy cheesy zucchini casserole is super easy to throw together and ready to serve in a snap. This recipe also requires just a couple of readily available ingredients to make. For a family-friendly meal, serve this casserole with a grilled steak or pork chops.

My family loves this casserole. They always give this a thumbs-up. I’m glad that even my picky eaters enjoy this. Who wouldn’t? This casserole is filled with fresh veggies in a delicious cheese sauce topped with crunchy buttered topping.

Ingredients

2 Eggs, slightly beaten

1 teaspoon Pepper

4 c. Zucchini, diced into 1-inch pieces

1/4 c. Panko Breadcrumbs

1 c. Shredded Cheddar Cheese

3/4 –1 teaspoon Garlic Powder

1 tablespoon Butter, melted

1 c. Mayonnaise

How to make Easy Cheesy Zucchini Casserole

Step 1: Cook the diced zucchini in a pot of boiling water for about 3 minutes. Drain when done and cool.

Step 2: Place the parboiled zucchini, mayonnaise, cheddar cheese, eggs, pepper, and garlic powder in a bowl. Mix well until combined. Into a greased 1 1/2-quart baking dish, pour the mixture.

Step 3: Mix the Panko breadcrumbs with melted butter in a bowl. Then, pour this over the casserole.

Step 4: Place in oven and bake for 35 minutes at 350 degrees F or until the zucchini is fork tender.

Notes:

To freeze, cook the zucchini as directed. Drain and transfer into a bowl of ice water. Then, drain and scatter on a parchment-lined baking sheet. Into the freezer, place the baking sheet. In the morning, transfer the zucchini into a few labeled freezer bags.

When ready to serve, thaw the zucchini, then drain the excess water and continue with the recipe.

If not parboiling the zucchini, you will need to bake the zucchini longer.
