Throw this easy Italian pasta salad in minutes with spiral rotini pasta, cucumber, tomatoes, red onion, black olives, and feta cheese tossed in Italian dressing. Serve this refreshing salad right away or chill in the fridge for a few hours before serving.
INGREDIENTS
¼ c. finely diced red onion
1 box (12 ounces) tricolor rotini pasta
1 c. halved cherry or grape tomatoes
1 can (2.25 ounces) of sliced black olives drained
1 c. chopped cucumber (peeled and seeded, about 1 cucumber)
½ – 1 c. Italian salad dressing
1 c. crumbled feta cheese
HOW TO MAKE EASY ITALIAN PASTA SALAD
Step 1: Following the package directions, cook the pasta in salted boiling water. Drain when done and run the cooked pasta under cold water.
Step 2: Place the pasta in a large mixing bowl. Add the cucumber, tomatoes, feta cheese, olives, and red onion. On top, pour the Italian dressing. Toss well to coat. I recommend starting with half a cup of Italian dressing and going from there. I add around 3/4 c. dressing and reserve the remaining for later.
Step 3: Serve the salad immediately or chill in the fridge for a couple of hours before serving.
NOTES:
Feel free to add more pasta, olive or tomato, and even red onion I desired. You can also add extra feta cheese. This recipe is pretty versatile, adjust the ingredients according to your liking!
For this recipe, you can use your preferred Italian dressing. My favorite is Olive Garden Italian Dressing.
In the fridge, keep any leftovers and store them for up to 3 to 4 days. If desired, you can also throw this salad together a day in advance. Before serving, add a little more dressing to moisten the salad.
In this recipe, I use mini cucumbers. I peel them, then cut them in half lengthwise and slice them into small pieces. Use regular cucumbers if desired. Just remove the seeds and pulpy things out before chopping.
