Delicious dinner that gives you the best of both worlds! This meatloaf and potatoes dinner is super easy to make, and you can have them ready in under thirty minutes!
INGREDIENTS
Meatloaf:
1 large egg
1 lb ground beef, 90/10
½ tsp garlic powder
¾ tsp Worcestershire sauce
⅓ c. Romano or Parmesan cheese
2-4 tbsp ketchup
⅓ c. seasoned breadcrumbs
½ tsp kosher salt
¼ tsp ground black pepper
Warm water (optional- this is only needed if your mixture feels too dry- I suggest starting with a little if you need it)
Cooking spray
Potatoes:
2 tsp olive oil
¼ tsp garlic powder
3-5 medium potatoes, peeled and sliced thin
1 c. cheddar cheese, shredded
½ tsp kosher salt
¼ tsp ground black pepper
Easy Meatloaf and Potatoes Dinner
Ingredients

- 1 c. cheddar cheese shredded
- ½ tsp kosher salt
- ¼ tsp ground black pepper
Instructions
- Prepare the oven. Preheat it to 400 degrees. Using cooking spray, grease a 12-cup non-stick muffin tin and set aside.
- Place the meatloaf ingredients in a large bowl and mix well until just combined.
- Evenly divide the meat and press each into the tin until about halfway through.
- In a large bowl, place the potato slices and drizzle with oil, and season with salt, pepper, and garlic powder. Toss well until the slices are completely coated.
- Onto the tops of the meatloaf in the muffin pan, place about 4 to 5 slices.
- Place in the preheated oven and bake for about 20 minutes.
- After 20 minutes, sprinkle the meatloaves with cheese.
- Resume baking for 10 minutes more until the cheese has melted.
- Allow to cool for about 5 minutes. To keep the meatloaf from stocking, cut around the outside where each meatloaf meets and around the bottom using a butter knife. Then, very carefully take the meatloaves out of the pan.
- Serve right away. Enjoy!
