Easy Olive Garden Zuppa Toscana Soup

Super quick and an amazing, simple copycat version of Olive Garden Garden Zuppa Toscana Soup. This soup is creamy, rich, and has flavors that you will not be able to resist!

This tasty soup is already a meal by itself. But this also pairs wonderfully with many side dishes, such as a nice, crusty baguette for dipping into the sauce. You can also serve this with a simple side salad. Rolls are also a delicious accompaniment to this soup, even oyster crackers.

Ingredients

4 tbsp butter

1 lb spicy Italian ground sausage – use mild for kid-friendly

½ white onion – diced

1 tbsp minced garlic

2 c. water

4-5 yellow potatoes – cut into 1-inch pieces

6 c. chicken broth

2 c. heavy cream

4 c. chopped kale

chopped bacon or bacon bits and grated Parmesan cheese for topping – optional

3 tsp salt

1 tsp black pepper

How to make Easy Olive Garden Zuppa Toscana Soup

Step 1: Cook the sausage in a large pot for about 5 to 6 minutes until browned. To a plate, transfer the sausage using a slotted spoon and set aside.

Step 2: Melt the butter in the same pot. Then, add the onions and saute over medium heat until translucent. Add the garlic and continue to cook for a minute more until aromatic.

Step 3: Pour in the chicken broth and water. Add the potatoes and season with salt and pepper. Bring everything to a boil. Cook until the potatoes are tender.

Step 4: Next, add the kale and heavy cream. Stir well. If needed, adjust the salt and pepper.

Step 5: Serve the soup right away topped with grated Parmesan cheese (optional). Enjoy!

Note:

If using regular ground sausage, make sure to add 1 tsp dried Italian herb seasoning or Herbs de Provence along with a pinch of crushed red pepper flakes.
