Ingredients
2 tablespoons Olive oil, divided
1 onion, diced
4 garlic cloves, minced
4 al fresco roasted garlic fully cooked chicken sausages sliced
1 red bell pepper, diced
1 green bell pepper, diced
1 teaspoon smoked paprika
1 teaspoon turmeric
1 tablespoon tomato paste
1 teaspoon dried oregano
Pinch red pepper flakes
2 c. low sodium chicken stock
1 c. uncooked white jasmine rice
1 tablespoon fresh parsley, chopped (optional)
3/4 teaspoon kosher salt more or less to taste
How to make Easy One Pot Sausage and Rice Skillet
Step 1: To a large saucepan, heat 1 tbsp olive oil over medium heat. Once hot, add the sausage slices and cook for about 2 to 3 minutes on each side until brown. Set aside when done.
Step 2: In the now-empty pan, add the rest of the 1 tbsp olive oil. Then, toss in the onion and peppers. To taste, season with salt and pepper. Cook for about 5 to 8 minutes, stirring often.
Step 3: To the pan, add the tomato paste along with the garlic, spices, and kosher salt. Stir well and cook for additional 30 to 60 seconds.
Step 4: Next, add the rice and stir. Then, pour in the chicken stock and place the sausages back in the pan.
Step 5: Bring everything to a simmer, then adjust the heat to low. Put the lid on and cook for 20 to 25 minutes more or until the liquid has evaporated and the rice is completely cooked.
Step 6: Serve the sausage and rice skillet immediately, garnished with some fresh chopped parsley (optional). Enjoy!
