Easy Oven Baked Chicken Bites

Into small bites, the chicken breasts are sliced. They are seasoned well and baked in the oven until juicy and tender. These are the best oven-baked chicken bites you’ll ever make! For a filling dinner, serve this over cauliflower rice, and do not forget to drizzle with the pan juices for that extra layer of flavor!

INGREDIENTS

1 lb (450 grams) chicken breasts, skinless and boneless

1 tbsp olive oil

1 tsp salt

2 tbsp unsalted butter, diced

1/4 tsp fresh ground pepper

1/2 tsp paprika

1/8 tsp cayenne pepper

1/2 tsp garlic powder

1/2 tsp onion powder

1 tsp instant chicken stock, optional (lower the salt amount if using)

1 tsp Italian seasoning

Fresh chopped parsley, for garnish

How to make Easy Oven Baked Chicken Bites

Step 1: Prepare the oven. Preheat it to 420 degrees F or 220 degrees C (conventional).

Step 2: Into 1-inch cubes, slice the chicken.

Step 3: Place the seasonings (salt, pepper, paprika, cayenne pepper, garlic powder, onion powder, chicken stock, and Italian seasoning) in a small bowl, Mix well until blended.

Step 4: In a baking dish, arrange the chicken and sprinkle with the seasoning mix and drizzle with 1 tbsp olive oil. Toss the chicken until all sides are coated. With butter cubes, patch the seasoned chicken.

Step 5: Place in the preheated oven and bake for about 16 to 18 minutes or until the internal temperature of the chicken reaches 165 degrees F or 75 degrees C. Stir the chicken bites using a spoon for even baking after about 8 to 10 minutes. Once the chicken bites are done, they should have crisp and golden edges. If you want crispier chicken bites, broil in the last 2 minutes on high.

Step 6: Take the baking dish out of the oven when done. Over the chicken, sprinkle the fresh chopped parsley. Before serving, let the chicken rest for about 5 minutes. Enjoy the chicken bites over cauliflower rice with drizzles of the pan juices and a slice of lemon on the side.
