Easy Tuscan roast chicken

This easy Tuscan Roast Chicken is simple to put together and insanely delicious! The chicken is flavored with fresh rosemary, garlic, and lemon, then roasted in the oven until succulent. For a complete meal, enjoy this juicy, tender, and flavorful Tuscan roast chicken with a simple side salad, some mashed potatoes, or (my favorite) cucumber salad.

Ingredients

8 garlic cloves

1 x 1.8-2kg free range/organic chicken

2 onions, quartered

1 c. white wine

fresh rosemary

1 c. chicken stock

Rub:

2 garlic cloves

2 sprigs of fresh rosemary

4-5 tbsp olive oil

zest and juice of 1 lemon, reserve lemon

salt & pepper to taste

How to make Easy Tuscan roast chicken

Step 1: Prepare the oven. Preheat it to 200 degrees C.

Step 2: Finely chop the rosemary and garlic. To make the rub, mix them with lemon zest and juice, salt, pepper, and olive oil.

Step 3: Over the chicken, rub the mixture, gently loosening the skin and pushing some of the rubs under the chicken skin.

Step 4: In the cavity of the chicken, place the reserved lemon. Then, transfer the chicken to an oven-proof dish.

Step 5: Around the chicken, add the onions, garlic cloves, and some extra rosemary. Over the dish, pour the wine and chicken stock.

Step 6: In the preheated oven, place the chicken. Quickly adjust the oven temperature to 160 degrees C and let the chicken roast for about 45 minutes or until almost completely cooked. Then, adjust the temperature to 220 degrees C to let the skin of the chicken crisp up.

Step 7: The chicken is done once it is golden brown and completely cooked. Before carving, let the chicken rest for about 10 to 15 minutes.

Step 8: Serve and enjoy!
