For someone as fond of corn as myself, I anxiously await the arrival of summer and the abundance of fresh corn in local markets. This Korean Corn Cheese is one of my go-to recipes whenever I have corn on hand. It’s mouth-watering good!

It requires only a few pantry staples and can be whipped up in less than 20 minutes! Each of the sweet, salty, cheesy, and sticky flavors shine through in just the right amounts in this meal. It’s great as a snack with chips or as a side dish, and we’re having the latter today.

To start, what is Korean Corn Cheese? Korean Corn Cheese is a popular and tasty accompaniment to Korean barbecue and can be prepared in minutes. In restaurants, it’s usually prepared at the table in a special insert that fits around the grill, or it’s served out in a boiling, sizzling dish. You can also use this as a dip with some tortilla chips or toasted bread.

INGREDIENTS

1/3 c. mayonnaise

2 tsp granulated sugar

2 (15 ounces each) cans of corn kernels, drained

3 tbsp unsalted butter

Kosher salt and freshly ground black pepper, to taste

1 c. shredded mozzarella cheese, grated

1 green onion, thinly sliced

How to make Korean Corn Cheese

Add the corn in a cast-iron skillet over medium heat along with the butter, mayonnaise, and sugar. Stir constantly until the butter has melted and the mayonnaise and butter are already blended. To taste, season with salt and pepper.

Sprinkle the cheese on top once the mixture is bubbling.

Place the dish under the low broiler and cook until the cheese becomes golden brown.

Serve the Korean Corn Cheese immediately, garnished with some green onions. Enjoy!
