Herb Roasted Chicken Thighs in Creamy White Wine Sauce

This is an easy skillet dinner with deliciously tender chicken thighs in a smooth and super addictive creamy white wine sauce.

Ingredients

3 pounds chicken thighs, bone-in, skin-on

1 tbsp olive oil

Salt and pepper

3 garlic cloves, chopped

3-4 thyme sprigs (leaves only)

2 tbsp butter

1 medium onion, diced

1 tbsp flour, for thickening the sauce

½ c. white wine

Italian seasoning, (divided)

Salt and pepper to taste

1 c. chicken stock

½ c. heavy cream

How to make Herb Roasted Chicken Thighs in Creamy White Wine Sauce

Step 1: Prepare the oven. Preheat it to 400 degrees F.

Step 2: In a large skillet, heat 1 tbsp olive oil over medium-high heat. In the meantime, season the chicken thighs with salt, pepper, and Italian seasoning.

Step 3: Place the chicken thighs in the hot oil, skin side down, and sear for about 4 to 5 minutes over medium-high heat until browned. Flip and chicken thighs and sear the other side for another 4 minutes. Set the chicken thighs aside when done.

Step 4: In the same skillet, melt 2 tbsp butter. Then, add the onion and saute for about 3 to 4 minutes until browned. Then, add the chopped garlic, thyme, and 1 tsp Italian seasoning. Continue to cook for a minute more.

Step 5: Then, stir in 1 tbsp oil and cook for just a minute until no longer white. Next, gradually pour in the wine, adjusting the heat to medium-high. Cook for a couple of minutes.

Step 6: Now, pour in the chicken stock and heavy cream. Stir well and cook for additional 5 minutes until the mixture has slightly reduced. To taste, season the sauce with salt and pepper.

Step 7: Place the chicken thighs back into the pan. Place in the preheated oven and bake for about 35 minutes, uncovered.

Step 8: Before serving, garnish with some fresh thyme. Enjoy the chicken thighs with mashed potatoes, rice, or roasted vegetables.
