This recipe is pretty versatile. It works wonders with a variety of chicken cuts; boneless skinless chicken thighs, breasts, drumsticks, wings, and bone-in thighs. The cooking time may vary, but the chicken is done once the internal temperature of the thickest part reaches at least 165 degrees F.

Ingredients

1-1/2 pounds of boneless, skinless chicken thighs or breasts

2 tbsp olive oil

1/4 c. lemon juice

1/4 c. soy sauce

2 tbsp minced fresh ginger

2 tbsp minced fresh parsley

2 medium garlic cloves, minced

1 tsp kosher salt

1/2 tsp ground black pepper

How to make Lemon Ginger Soy Marinated Grilled Chicken

Step 1: Place the lemon juice, soy sauce, olive oil, ginger, garlic, parsley, salt, and pepper in a large bowl. Mix well until blended.

Step 2: In a sealable bag or a bowl, place the chicken. Over the chicken, pour the marinade. Seal the bag and put it on a plate or cover bowl. Place in the fridge to marinate the chicken for at least 2 hours or up to 12 hours.

Step 3: Take the chicken out of the marinade and pat them dry with paper towels. Discard the marinade.

Step 4: Lay the chicken on the grill and cook over medium-high heat, flipping often, until the internal temperature of the chicken reaches 165 degrees F.

Step 5: Serve the grilled chicken right away. Enjoy!
