Low Carb Eggplant Pizza

This is a fun, healthy pizza that uses sliced eggplant as the crust. This is packed with amazing flavors and incredibly easy to whip up.

Ingredients

1 tbsp olive oil

1 large eggplant

2 garlic cloves, minced

1/2 yellow onion, sliced

1/2-1 c. no sugar added pizza sauce

1 c. fresh baby spinach

3/4 c. shredded mozzarella cheese

crushed red pepper, optional

¼ c. chopped fresh oregano

sea salt to taste

ground pepper to taste

How to make Low Carb Eggplant Pizza

Step 1: Prepare the oven. Preheat it to 400 degrees F.

Step 2: Slice the eggplant lengthwise into about 1/4 to 1/3 inch thick slices. On each side, rub or brush the eggplant with a bit of olive oil. Then, place them on a baking sheet lined with parchment paper or a baking stone. Season the eggplant slices with salt and pepper. Bake in the preheated oven for about 7 to 10 minutes or until hot and beginning to cook down.

Step 3: In a skillet with half tbsp olive oil, saute the garlic for about 3 to 4 minutes until tender. To taste, season with salt and pepper. Add in the pizza sauce along with the spinach. Continue to cook for 1 to 2 minutes more or until the mixture is warmed through and the spinach has wilted.

Step 4: Take the eggplant slices from the oven. On top of each slice, spoon the onion and spinach mixture, then sprinkle with cheese and chopped oregano. Return to the oven and bake for 5 minutes or until the cheese has melted.

Step 5: Remove from the oven when done and serve the Eggplant Pizza right away garnished with some fresh oregano and crushed red pepper.

Notes:

You can use either store-bought or homemade pizza sauce.

Feel free to add 8 ounces of ground chicken or veggie sausage with garlic and onion if you want to add more protein. Cook until the sausage is cooked through before adding the pizza sauce and spinach.
