With amazing flavors, you’ll surely fall deep for this cheesy, creamy mashed potato casserole! It’s easy to make and excellent to serve on special occasions.

All you need to make this casserole are simple ingredients that you might already have on hand; potatoes, sour cream, and goat cheese (which gives the mashed potato a smooth and creamy texture). To top it all off, Parmesan cheese is sprinkled over the top. Pop this in the oven and have this ready on your dinner table in a cinch!

This mashed potato casserole is baked until a golden crust forms. It’s super good your family and guests will dig straight into this superb meal!

INGREDIENTS

3 tablespoons butter

4 ounces of goat cheese

1 c. sour cream

2 pounds potatoes

½ teaspoon salt

¼ c. milk

½ c. shredded Parmesan cheese

How to make Mashed Potato Casserole

Step 1: After peeling the potatoes, cut them into medium chunks. In a pot, place the potatoes. Add water enough to cover the potatoes. Bring to a boil and cook until the potatoes are tender. When done, drain the liquid and transfer the potatoes to a mixing bowl.

Step 2: Mash the potatoes using a masher. Then, add the goat cheese along with butter, sour cream, and salt. Mash well, ensuring everything is thoroughly blended.

Step 3: Pour in the milk and mash the ingredients again until the potatoes have a creamy and smooth texture.

Step 4: Into an oven-safe casserole, spoon the mashed potatoes and sprinkle with Parmesan cheese.

Step 5: Place in the oven and bake for about 40 minutes at 350 degrees F until the casserole has formed a golden-brown crust.

NOTES:

For this recipe, use herbed goat cheese.

Feel free to prep this casserole in advance and bake it the next day.

You are welcome to substitute goat cheese with cream cheese instead.

Use room-temperature dairy products.
