This Moroccan Chicken is another one of my most favored one-pot meals. It’s a delicious, unique dinner option packed with mouthwatering flavors!
INGREDIENTS
Spice blend:
1/2 tsp ground ginger
1 tsp paprika
1 tsp ground cumin
1/2 tsp cinnamon
1/4 tsp ground turmeric
1/2 tsp ground coriander
Chicken:
6 bone-in, skin-on chicken thighs
1 tbsp olive oil
2 tbsp all-purpose flour
1 onion, halved and sliced
1 1/2 tsp minced garlic
1 1/2 c. chicken broth
1/4 c. golden raisins
salt and pepper to taste
1/4 c. chopped cilantro leaves
1/2 c. pitted green olives
2 tsp lemon juice
How to make Moroccan Chicken
Spice blend:
Step 1: To a small bowl, add all the spices and mix well until blended.
Chicken:
Step 2: In a large pot, heat the oil over medium heat.
Step 3: In the meantime, prepare the oven and preheat it to 375 degrees F.
Step 4: Season both sides of the chicken thighs with salt and pepper. Into the hot oil, place the chicken, skin side down, and sear for about 4 to 5 minutes on each side until browned. Set aside when done.
Step 5: In the now-empty pan, add the onion and saute for about 4 to 5 minutes or until tender. Then, add the garlic and cook for another 30 seconds.
Step 6: To the pan, add the spice blend along with the flour. Continue to cook for additional 30 seconds while stirring constantly. Whisk in the chicken broth. To taste, season with salt and pepper.
Step 7: Return the chicken to the pan and mix in the raisins.
Step 8: Put the lid on and transfer the pan into the preheated oven. Then, bake for about 25 to 30 minutes or until the chicken is tender.
Step 9: Remove the cover and add the olives and lemon juice. Stir well until incorporated.
Step 10: Over the chicken, spoon the sauce and sprinkle with cilantro. Serve right away. Enjoy!
