One Pot Cajun Chicken Alfredo

This one-pot dinner with tender chicken chunks and smoky sausage in a rich, delightful homemade Alfredo sauce is a regular on my family’s menu rotation. This is incredibly easy to make and ready in less than thirty minutes. This One-Pot Cajun Chicken Alfredo is packed with amazing flavors that I’m sure everyone will be raving about.

I always make sure to throw together a big batch because leftovers are amazing! Reheat the leftovers over low heat and add a splash of chicken broth and cream as needed.

Ingredients

14 ounces of smoked sausage, sliced on the diagonal

4 cloves garlic, minced

4 tbsp olive oil

1 lb. chicken, cut into bite-sized pieces

1-quart low-sodium chicken broth

1 lb. penne pasta, uncooked

4 oz Parmesan cheese, freshly shredded, more as needed

2 1/2 c. heavy cream

Italian Parsley garnish

1 1/2 tbsp Cajun seasoning, plus more to taste

1/2 tsp of kosher salt

freshly ground black pepper to taste

How to make One Pot Cajun Chicken Alfredo

Step 1: Heat the olive oil in a large cooking pot with a lid over medium-high heat.

Step 2: While the oil is heating, season the chicken with salt and pepper. Place the chicken into the hot oil and sear. Then, add the sausage and cook further until lightly browned.

Step 3: Add the garlic, stir, and cook for another 2 minutes.

Step 4: Pour in the chicken broth and heavy cream. Then, add the dried pasta and Cajun seasoning. Stir well and bring the mixture to a simmer on medium-high heat.

Step 5: Adjust the heat to low and cook for additional 15 to 20 minutes, covered, until the pasta is tender.

Step 6: Take the pot off the heat when done and gradually whisk in the Parmesan cheese.

Step 7: Add the chopped parsley and stir. To taste, sprinkle with extra Cajun seasoning.
