I love to cook and try new recipes. I also like experimenting. It tests my taste and creativity. I love this Chicken Parmesan Bake as is, but there are fun and delicious variations you can try. If desired, you can throw in fresh veggies. I suggest using a bigger casserole to give chicken room. For a tasty Italian spin, you are welcome to add marinara sauce and mozzarella cheese over the chicken. Also, buttered Panko breadcrumbs are another great addition. Sprinkle the breadcrumbs on top of the casserole. As the Parmesan chicken bakes, the breadcrumbs become golden brown and crispy.
Ingredients
1 cup light mayonnaise or Greek yogurt (or a combination of half of each)
6 boneless, skinless chicken breasts
1/2 cup fresh Parmesan cheese, plus more for the top
1 teaspoon garlic powder
1 1/2 teaspoons seasoned salt
1/2 teaspoon pepper
How to make Parmesan Chicken Bake
Step 1: Prepare the oven. Preheat it to 375 degrees. Grease a 9 x 13-inch glass pan. In the pan, arrange the chicken.
Step 2: Combine the rest of the ingredients, then evenly spread this over each piece of chicken, covering the entire raw meat. On top, sprinkle extra fresh Parmesan.
Step 3: Place in the preheated oven and bake for about 45 minutes, uncovered.
Step 4: Serve right away. But I prefer eating this the next day as this Parmesan Chicken Bake gets better. Simply reheat this in the microwave. Enjoy!
Note:
I recommend using fresh Parmesan cheese and not the ones in the can. Keep in mind to use seasoned salt and not table salt. Adjust according to taste.
