Potato Lasagna

This potato lasagna is a regular at our house. It’s super easy to throw together and ready in a cinch! To make this delicious lasagna, all you need are just a couple of readily available ingredients. It’s as good if not better than the usual lasagna made with noodles. This potato lasagna has been my family’s favorite to pair with any meal. It’s thick, cheesy, and creamy with layers of potatoes, cheese, and ham. Leftovers are also amazing to serve as an appetizer!

Ingredients

2 eggs

5 potatoes, peeled

8 slices ham

7 slices mozzarella cheese

¼ c. fresh parsley (10 grams), chopped

5 slices bacon, cooked and crumbled

2 c. shredded mozzarella cheese (200 grams)

1 c. heavy cream (240 ml)

2 tsp salt

1 tsp pepper

How to make Potato Lasagna

Step 1: Into 1/4 inch (1/2 cm) pieces, slice the peeled potatoes. Season them with salt and pepper. Toss well until evenly coated.

Step 2: Into the bottom of a greased, square baking pan, evenly press a layer of potatoes. On top, arrange the slices of ham, then half of the sliced cheese. Make another layer of the potatoes, then top with the rest of the ham and sliced cheese.

Step 3: Prepare the oven. Preheat it to 350 degrees F or 180 degrees C.

Step 4: On top, sprinkle the bacon and parsley. Finally, add the remaining potatoes on top and sprinkle with shredded cheese, pressing to an even layer.

Step 5: Whisk the heavy cream and eggs in a small bowl until well blended. Pour this over the shredded cheese.

Step 6: Place in the preheated oven and bake for about 40 minutes or until the cheese is deep golden brown.

Step 7: Remove from the oven when done and let the lasagna cool for a bit.

Step 8: Slice and serve. Enjoy!
