Roasted Citrus And Herb Chicken Recipe

Enjoy both worlds with this easy recipe. This dish is a cross between orange chicken and lemon chicken. My kids cannot get over this dish! This is an excellent dish for citrus lovers. The chicken is cooked with fresh slices of orange and lemon. The entire thing is drizzled with citrus vinaigrette. For extra depth of flavor, add some fresh herbs on top.

To make this recipe, you can use any chicken parts you have in your fridge. If you want to make a quick veggie side, simply drizzle more olive oil on the pan with chicken and add some cauliflower florets or your preferred veggies halfway through cooking the chicken. Leftovers are also delicious to use for salad toppings the next day.

INGREDIENTS

2 oranges, sliced

1 lemon sliced

3 to 4 pounds of bone-in chicken parts

¼ c. olive oil

1 onion, diced

1 c. fresh orange juice

½ c. fresh lemon juice

4 cloves garlic, minced

½ teaspoon paprika

¼ teaspoon red pepper flakes, optional

½ tablespoon dried oregano

Sea salt and freshly ground black pepper

2 to 3 fresh thyme sprigs

2 to 3 fresh rosemary sprigs

How to make Roasted Citrus And Herb Chicken

Step 1: Prepare the oven. Preheat it to 400 degrees F.

Step 2: Whisk the olive oil, garlic, orange juice, lemon juice, dried oregano, paprika, diced onion, and red pepper flakes in a bowl. To taste, season with salt and pepper.

Step 3: At the bottom of a baking dish, place half of the orange slices and half of the lemon slices.

Step 4: On top, arrange the piece of chicken, then season to taste.

Step 5: Place the thyme, rosemary, and the rest of the orange and lemon slices over the chicken.

Step 6: All over the chicken, drizzle the orange-lemon juice mixture.

Step 7: Bake in the preheated oven for about 45 to 60 minutes, uncovered.
