Roasted Green Beans and Potatoes

Super simple to make, extra delicious, and an excellent side to any meal! These roasted green beans and potatoes are a staple at home. It pairs great with just about anything or is delicious by itself.

This recipe is perfect on busy nights. It’s incredibly easy and quick to make. Filling, delicious, and a wonderful addition to any meal. These roasted green beans and potatoes are packed with flavor. Super good, even your kids will devour this!

INGREDIENTS

Potatoes:

2 tablespoons olive oil

1 ½ pounds potatoes

½ teaspoon pepper

½ tablespoon dried Italian herbs

½ tablespoon paprika

⅓ teaspoon salt or to taste

Beans:

½ tablespoon olive oil

1 pound green beans, trimmed and cut in half

¼ teaspoon salt or to taste

3 garlic cloves, minced

How to make Roasted Green Beans and Potatoes

Step 1: After peeling the potatoes, cut them into cubes. In a medium mixing bowl, place the potatoes. Then, add the olive oil, salt, pepper, paprika, and Italian herbs to the potatoes. Toss well until the potatoes are evenly coated.

Step 2: Onto a baking sheet, transfer the potatoes, evenly spreading them out. Bake in the oven for about 15 minutes at 400 degrees F.

Step 3: In the meantime, place the green beans in the same mixing bowl along with the olive oil, garlic, and salt. Toss well until the beans are completely coated.

Step 4: Remove the potatoes from the oven and top them with the green beans, evenly spreading them for even cooking. Return to the oven and resume baking for additional 25 minutes.

Step 5: Serve right away with meats, greens, or by itself. Enjoy!

NOTES:

In a storage container with a lid, keep the roasted green beans and potatoes and store them in the fridge for up to 3 to 5 days.

To reheat, transfer in a pan. Add a splash of oil and reheat, stirring often until evenly warmed.
