These are the best-roasted potatoes and carrots! Tender and golden brown veggies clothed in butter, garlic, and herbs. This dish is very economical and pairs perfectly with beef, chicken, and seafood.

This is a delicious, hearty side dish that I love making almost every week! Even the kids love these roasted potatoes and carrots. The best part of this easy recipe is this is very adaptable. You are welcome to use veggies to the mix, like asparagus, broccoli, red onions cauliflower, or green beans. For another layer of flavor, you can also sprinkle some Parmesan or feta cheese on top. You can also easily make this into a complete meal by throwing in protein such as chicken thighs or drumsticks. Bacon is also an amazing addition! As for the flavorings, you can add other spices and herbs like green olives, lemon juice, smoked paprika, capers, or sun-dried tomatoes. Whatever way to pick, this side dish will be impressively delicious!

INGREDIENTS

2 tbsp butter, melted

1 tbsp garlic, minced

3 tbsp olive oil

1/2 tsp dried thyme

1 lb. whole carrots, peeled and cut into 1-inch thick slices

1 1/2 tsp salt

1/4 tsp pepper

cooking spray

1 lb. small potatoes, halved

2 tbsp fresh parsley, chopped

How to make Roasted Potatoes and Carrots

Step 1: Prepare the oven. Preheat it to 400 degrees F. Using cooking spray, grease a sheet pan.

Step 2: In a large bowl, place the olive oil, butter, garlic, salt, pepper, and thyme. Mix well until blended.

Step 3: To the bowl, toss in the carrots and potatoes.

Step 4: Onto the prepared sheet pan, spread the veggies into a single layer. Place in the preheated oven and roast for about 30 to 40 minutes or until the potatoes and carrots are tender.

Step 5: Remove from the oven when done and serve the Roasted Potatoes and Carrots right away garnished with parsley. Enjoy!
