Roasted Red Potatoes

These roasted red potatoes have been my family’s favorite for years! We enjoy these roasted red potatoes coated in garlic, herbs, and Parmesan cheese as a side dish for an easy weeknight meal. The best part is this dish only takes just minutes to put together!

If you are on a constant hunt for easy side dishes recipes, this roasted red potatoes recipe is a must-try and a keeper! I have a few favorites, and of course, these roasted red potatoes are one on my top list!

These roasted red potatoes are also very nutritious and inexpensive. I love roasting potatoes, especially these red potatoes because this type holds its shape well and has a neutral flavor that compliments well the seasonings. But this recipe is also great for Yukon gold or fingerling potatoes. You are also welcome to customize the flavor to suit your taste.

INGREDIENTS

1/4 c. olive oil

2 tsp garlic, minced

1 1/2 lbs baby red potatoes halved

1 1/2 tsp salt

1 tsp Italian seasoning

1/2 tsp pepper

1/4 c. finely grated Parmesan cheese

cooking spray

2 tbsp chopped fresh parsley

How to make Roasted Red Potatoes

Step 1: Prepare the oven. Preheat it to 400 degrees. Using foil, line a sheet pan and grease with cooking spray.

Step 2: In a large bowl, place the potatoes. Then, add the olive oil, garlic, salt, pepper, Italian seasoning, and Parmesan cheese. Toss well, making sure to completely coat the potatoes.

Step 3: On the prepared baking sheet, spread the potatoes in a single layer.

Step 4: Place in the preheated oven and bake for about 35 to 40 minutes or until the potatoes are golden brown and fork-tender.

Step 5: Remove from the oven when done and serve the roasted red potatoes right away garnished with some parsley. Enjoy!

NOTE:

For this recipe, you use large red potatoes in place of baby potatoes. Simply slice the potatoes into 1-inch pieces.
