If you are looking for an easy dinner option, this rosemary chicken is a must-try! This is incredibly simple to make using pantry essentials. Perfectly browned chicken breasts clothed in a garlic and herb sauce. The chicken is tender and juicy, and the delicious sauce will have everyone asking for seconds!
Chicken is a staple at home, and this rosemary chicken is one of my favorites to serve to my family. This is also a very versatile recipe. You can throw in veggies to the baking dish with the chicken. If desired, you can also top the chicken with feta or Parmesan cheese.
INGREDIENTS
1 tbsp olive oil
1 1/4 lbs. boneless, skinless chicken breasts
3 tbsp butter, melted
1 1/4 tsp minced garlic
2 tsp fresh rosemary leaves, minced
1/4 c. chicken broth
2 tbsp lemon juice
lemon slices and rosemary sprigs for serving – optional
cooking spray
salt and pepper to taste
1 tbsp chopped fresh parsley
How to make Rosemary Chicken
Step 1: Prepare the oven. Preheat it to 400 degrees F. On both sides, season the chicken breasts with salt and pepper.
Step 2: In a large pan, heat the olive oil on medium-high heat. Once hot, add the chicken breasts to the pan and sear for about 3 to 5 minutes per side until browned. To a baking dish greased with cooking spray, transfer the chicken.
Step 3: Place the rosemary, butter, garlic, chicken broth, and lemon juice in a small bowl. Mix well until blended, then pour the butter mixture on top of the chicken.
Step 4: Place in the preheated oven and bake the chicken breasts for about 25 minutes or until completely cooked. Note that the baking time varies depending on their thickness. Once the internal temperature of the chicken breast reaches 165 degrees F, they are done.
Step 5: Over the chicken, spoon the sauce on the bottom of the baking dish and sprinkle with some parsley. If desired, garnish the Rosemary Chicken with some lemon slices and rosemary sprigs. Enjoy!
