Ingredients
2 pounds of ground beef
1 tablespoon olive oil
1 small red onion, finely chopped
2 cloves garlic, minced
1 red bell pepper, finely chopped
3/4 c. Italian style bread crumbs
1/2 c. Parmesan cheese
2 tablespoons tomato paste
2 tablespoons parsley, chopped
about 1/4 pound deli ham
2 eggs
1 1/4 c. shredded mozzarella cheese
marinara sauce
cooked pasta or zucchini noodles, if desired
12-15 large basil leaves
1 teaspoon salt
1/2 teaspoon pepper
How to make Sicilian Meatloaf
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: In a medium skillet, heat the olive oil over medium heat. Once hot, add the onion and red pepper. Saute for about 5 minutes or until the onions are clear. Next, add the garlic and saute until aromatic. Take off the heat and let the mixture cool fully.
Step 3: Place the ground beef, bread crumbs, parmesan, eggs, tomato paste, salt, pepper, parsley, and vegetable mixture in a large mixing bowl. Mix well with your hands until blended.
Step 4: On the counter, lay a large sheet of parchment paper. In the center, place the meat mixture, then pat it to make about an 8 x 15-inch rectangle.
Step 5: With a layer of ham, top the rectangle followed by a layer of basil, then cheese, making sure to leave an inch of the border all around.
Step 6: Roll the meatloaf up like a jelly roll beginning at the 8-inch end. To help guide you, use parchment paper. To seal, press down the top and ends together. Place the meatloaf on a baking sheet lined with parchment paper.
Step 7: Put in the preheated oven and bake for about 1 hour. Take it out of the oven when done, and let the meatloaf rest for about 10 minutes.
Step 8: Slice and serve the meatloaf with pasta or zucchini noodles. You can top them with marinara sauce if desired. Enjoy!
