Sliced Potato Cake

If you love potatoes, you’ll surely enjoy this Sliced Potato Cake. This is another easy and fun way to make potatoes. I like to serve this whenever I have guests coming over. Super easy to make using just a few pantry staples. Slice the potato cake into wedges and serve.

This is a delightful dish made with thinly sliced potatoes perfectly seasoned with Italian herbs and Parmesan. This sliced potato cake is baked until golden and crispy on the outside and soft on the inside. Keep any leftovers in an airtight container and store them in the fridge. Reheat the potato cake in the oven or on the stovetop.

INGREDIENTS

3 tablespoons olive oil

2 pounds potatoes

1 teaspoon dried Italian herbs

1 c. shredded Parmesan cheese

¾ teaspoon salt

¾ teaspoon pepper

How to make Sliced Potato Cake

Step 1: After washing the potatoes, thinly slice them using a mandoline if available.

Step 2: Into a large mixing bowl, place the potatoes. Then, add the oil, salt, pepper, and Italian herbs. Gently mix with your hands, ensuring all of the slices are evenly seasoned. Next, add the Parmesan and gently mix.

Step 3: Onto a large baking sheet, lay parchment paper. On top, place a 10-inch Springform Pan without the bottom. Place the potato mixture inside, evenly spreading it. Then, take off the Springform Pan ring.

Step 4: Place in a preheated 375 degrees F oven and bake for about 50 to 55 minutes or until the potatoes are golden brown and completely cooked.

NOTES:

To make sure the potatoes are sliced at the same thickness, use a mandoline. Or slice using a knife if mandoline is not available, making sure to slice the potatoes as thinly as possible.

I use the unbleached kind of parchment paper.

Depending on your preference, use more or less salt. You can also use fresh herbs like thyme or rosemary in place of dried Italian herbs.

Arrange the slices, making sure there are no clumps of potato slices stuck together.
