SLOW-COOKER LEMON CHICKEN

This lemon chicken is easily made in a slow cooker. The succulent chicken is packed with lemon flavor with tons of garlic. This slow-cooker lemon chicken is a complete meal by itself. The veggies are cooked right in the crock pot along with the chicken. This is a very satisfying, delicious weeknight dinner.

INGREDIENTS

2 tablespoons olive oil

4 cloves garlic

6-8 chicken thighs – bone-in, skin on

1 red onion

1-1.5 pounds of baby potatoes

1 lemon

2 tablespoons honey

1/2 tablespoon fresh thyme leaves

Bunch of thin green asparagus

sea salt

Pepper

HOW TO MAKE SLOW-COOKER LEMON CHICKEN

Step 1: After peeling the red onion, slice them and add them in one layer to the bottom of a slow cooker. On top, add the chicken thighs in a single layer.

Step 2: Wash the baby potatoes. Slice them in half and place them in the slow cooker.

Step 3: Place the zest of 1 lemon, juice of that same lemon, olive oil, honey, thyme, sea salt, pepper, and finely chopped garlic in a small bowl. Mix well, then add this to the slow cooker.

Step 4: Cover the slow cooker, making sure the lid is secure. Set to cook for 3 to 4 hours on high or 6 to 8 hours on low.

Step 5: In the last 15 to 20 minutes of cooking, set the slow cooker to high. Then, toss in the asparagus and replace the lid. Note that the thicker the asparagus, the longer it will take to cook.

Step 6: You can take the chicken thighs out of the slow cooker about 5 minutes before serving and broil for 3 to 5 minutes on high until the skin is golden (optional).
