Ingredients

1/4 c. olive oil

3 lbs. baby Dutch yellow potatoes

4 cloves garlic, peeled and minced

1 tbsp dried Parsley

1 packet (1 oz.) dry Ranch seasoning mix

2 tbsp grated Parmesan cheese

salt and pepper to taste

How to make Slow Cooker Ranch Potatoes

Step 1: Wash and pat dry the potatoes before cutting them in halves.

Step 2: Place the potatoes, olive oil, Ranch seasoning mix, minced garlic, dried Parsley, and salt & pepper in a bowl. Toss well.

Step 3: Using a nonstick cooking spray, lightly grease the crockpot insert.

Step 4: To the crockpot, transfer the potatoes. Put the lid on and set to cook for 4 to 5 hours on low or 2 to 3 hours on high until the potatoes are tender. To crisp up the potatoes, leave the lid partway open in the last 40 to 50 minutes.

Step 5: Before serving, garnish the potatoes with Parmesan cheese and dried parsley. Enjoy hot!

Notes:

For even cooking, slice the potatoes into a uniform size.

Swap, part or all of the olive oil with butter for an extra boost of flavor.

During the last hour of cooking, leave the lid party open to help the potatoes crisp up.

When the potatoes are tender, sprinkle them with shredded cheddar cheese and cook further, covered, until the cheese has melted.
