1/4 cup butter, melted
3 garlic cloves, minced
2 large sweet potatoes, or 3 medium sweet potatoes
1 tablespoon thyme leaves
small pinch nutmeg
1/2 cup freshly grated Parmesan
kosher salt
Freshly ground black pepper
How to make Smashed Sweet Potatoes
Step 1: Prepare the oven. Preheat it to 425 degrees. Into 1-inch thick rounds, slice the potatoes.
Step 2: Place the butter, garlic, and thyme in a small bowl. Season with salt, pepper, and nutmeg. Stir well until blended. Onto the potato rounds, pour the butter mixture. Toss well until the potato rounds are evenly coated. On a large baking sheet, transfer the sweet potatoes in an even layer, leaving about 1-inch space in between.
Step 3: Place in the preheated oven and bake for about 25 to 30 minutes or until the potatoes are fork-tender. Take the potatoes out of the oven, then turn the oven to broil (medium). Smash the potato slices using a fork, potato masher, or the flat bottom of a glass. Return to the oven and broil for about 3 to 5 minutes or until golden and crispy.
Step 4: Before serving, sprinkle the smashed sweet potatoes with some freshly grated Parmesan Parmesan. Enjoy!
