SPICE RUB:
1 tsp paprika
2 tsp chili powder
2 tsp garlic powder
1 tsp ground cumin
1/8 tsp ground black pepper
1/2 tsp salt
HONEY SAUCE:
1 tbsp apple cider vinegar
1/3 c. honey
CHICKEN:
6 to 8 boneless, skinless chicken thighs
green onions, for garnish
1 tbsp unrefined, cold-pressed coconut oil
How to make Spicy, Sweet and Sticky Chicken Thighs
Step 1: Prepare the oven. Preheat it to 375 degrees.
Step 2: In a cast-iron skillet, melt the coconut oil on medium-high heat.
Step 3: Mix the spice rub ingredients until well blended. Toss and coat the chicken in the spice rub.
Step 4: To the skillet, add the chicken and sear for about 5 minutes per side until browned.
Step 5: To make the honey sauce, mix the honey and apple cider vinegar until well combined.
Step 6: Take the skillet off the heat. Over the chicken thighs, pour the honey sauce and toss to coat.
Step 7: Place in the preheated oven and bake for about 25 to 30 minutes or until the chicken is completely cooked.
Step 8: Once done, remove from the oven and allow the chicken thighs to sit for a few minutes.
Step 9: Transfer to a serving plate and serve right away garnished with some green onions. Enjoy!
