This steak Diane is a classic! Super easy to make and ready in a cinch. This recipe is super versatile, and this also can be served on special occasions. And the savory and creamy Diane sauce is to die for!

Steak Diane is a pretty simple dish. A cut of steak is cooked in a delicious sauce made of butter and cream. Worcestershire sauce and Cognac boost the flavor of the Diane sauce.

The original steak Diane calls for a cut of steak that has been thinly pounded. This makes the meat so much quicker to cook. Although, for this recipe, I used a little thicker cut (a NY cut steak with a layer of fat). I like the necessary extra flavor from cooking the meat and rendering that fat gives.

If needed, you can also use other cuts of meat, such as eye fillet or rump steak. You can also try veal, pork, or chicken. The Diane sauce pairs perfectly with any protein!

Ingredients

25 grams butter

200 grams “NY” strip steak

1 shallot, finely diced

1 tsp salt

60 ml cream, thin or pouring

2 tsp Dijon mustard

1 tbsp parsley, finely chopped

1 tbsp Worcestershire sauce

1 tsp pepper, freshly cracked

2 tbsp brandy

How to make Steak Diane

Step 1: Cook the steak according to your desired doneness. Set aside.

Step 2: Add butter in the same pan you cooked the steak and let it melt over medium heat. Once melted, add the diced shallots and saute for a couple of minutes until translucent.

Step 3: To the pan, add the cream, brandy, Dijon mustard, and Worcestershire sauce. Let the mixture come to a quick boil before stirring in the parsley, salt, and pepper.

Step 4: Return the steak to the pan and toss to coat.

Step 5: On a plate, transfer the steaks with some extra sauce. Serve the steak right away with some green beans. Enjoy!
