Delicious tomato caper crispy baked gnocchi. It’s packed with gnocchi, tomatoes, capers, and cheese. This is an amazing option to switch out spaghetti night. I’m sure your loved ones will thank you for this savory baked dish!
Ingredients
1 tbsp butter
Olive oil
1 package (about 1 lb) of gnocchi
1 small onion, diced
1 c. fresh grape tomatoes, whole
1 tbsp whole capers, drained
2 cloves garlic, minced
1 tsp red pepper flakes
1/4 c. dry white wine
3/4 c. shredded mozzarella
1/4 c. grated Parmesan cheese
1 c. canned crushed tomatoes
1 tbsp fresh oregano, chopped
Basil, for garnish
Parsley, for garnish
Salt and pepper
How to make Tomato Caper Crispy Baked Gnocchi
Step 1: Prepare the oven. Preheat it to 400 degrees.
Step 2: Following the package directions, cook the gnocchi. Drain when done and set aside.
Step 3: Heat the nutter and olive oil in a 9-inch cast-iron skillet. Once the butter has melted, add the gnocchi and cook for about 5 minutes until all sides are browned and crispy. Set aside.
Step 4: Drizzle olive oil into the now-empty skillet. Add the onions and cook until translucent and lightly sprinkle with salt and pepper. Next, add the grape tomatoes and continue to cook until they burst. Then, add the garlic, capers, and red pepper flakes, and continue to cook for 30 seconds more.
Step 5: Pour in the white wine, deglaze the skillet, and decrease the liquid in half.
Step 6: Now, add the crushed tomatoes along with the oregano and shredded mozzarella. Return the crispy gnocchi and sprinkle with Parmesan.
Step 7: Bake in the preheated oven for about 20 to 30 minutes or until bubbling and golden brown.
Step 8: Remove from the oven when done and allow to cool for about 10 minutes.
Step 9: Before serving, garnish with some basil and parsley. Enjoy right away!
