Traeger Smoked Stuffed Pork Tenderloin

This is my favorite way of cooking pork tenderloin! The tenderloin is chock-full of cheese, bacon, and spinach. the real magic starts when you slice into the tenderloin as the creamy cheese mixture spills out. The tenderloin is also clothed in a Cajun spice rub and cooked perfectly on the smoker. Once you try this you’ll never cook pork tenderloin the same way again! This Traeger Smoked Stuffed Pork Tenderloin will surely be a big hit on your next get-together!

Ingredients

2 tbsp Cajun seasoning rub

1 1-2 lb pork tenderloin

1/3 c. shredded cheddar cheese

1/3 c. shredded mozzarella cheese

6 to 8 slices of cooked bacon, chopped

4 oz. frozen spinach, thawed and chopped

4 oz. cream cheese

How to make Traeger Smoked Stuffed Pork Tenderloin

Prepare the Traeger or other smoker. Preheat it to 250 degrees F.

In half, lengthwise, slice the tenderloin. Make sure not to cut it all the way. Open the tenderloin like a book and pound it flat to 1/4 inch thickness using a meat tenderizer/mallet.

In a bowl, place the cream cheese, bacon, cheddar, mozzarella, and spinach. Mix well until combined.

Over the tenderloin, spread the cheese mixture, then roll the tenderloin like a jelly roll and secure using cooking twine.

Sprinkle the Cajun seasoning rub on top.

On a baking pan or grill, place the tenderloin. Place in the preheated Traeger and cook for about 45 minutes to 1 hour. The tenderloin is done once its internal temperature reaches 140-143 degrees F.

Tent with a sheet of foil and let the tenderloin rest for about 10 minutes before slicing.

Notes:

You can make 1 cup of seasoning with this Cajun Spice Dry Rub recipe.

Keep in mind that while resting, the internal temperature of the tenderloin will continue to rise.
