This is seriously the best, crispiest oven-baked wings you’ll ever make! See notes for different sauces to pair these delicious wings either for tossing or dipping.

4 pounds/2 kg chicken wings, cut into wingettes and drumettes
5 tsp baking powder (NOT BAKING SODA/BI-CARB SODA)
3/4 tsp salt

How to make Crispy Oven Baked Chicken Wings
Step 1: If time permits, uncover the chicken wings and let them set in the fridge for a couple of hours to dry. Or pat them dry using a paper towel.
Step 2: Prepare the oven. Adjust the oven racks to the upper-middle and lower-middle positions, then preheat the oven to 250 degrees F or 120 degrees C.
Step 3: Using foil, line a baking tray. On the foil, place a rack such as a cooling rack. Using oil spray, grease the rack.
Step 4: In a large bowl or ziplock bag, place the wings. Then, add the baking powder and salt. Toss well until the wings are evenly coated.
Step 5: In a single layer, place the wings on the baking tray, skin-side up.
Step 6: On the lower middle oven rack, place the wings. Bake for about 30 minutes. After 30 minutes, transfer the wings o the upper middle rack and adjust the oven temperature to 425 degrees F or 220 degrees C. Continue baking for another 40 to 50 minutes, rotating the tray halfway through.
Step 7: When done baking, allow the wings to stand for about 5 minutes before tossing them in your favorite sauce. Alternately, serve the sauce as a dip or drizzle on the wings. Enjoy!
Notes:
If using whole wings, cut them up.
Keep in mind that after the wings are baked, they will turn dark golden brown unless you leave them in for an hour or so.
Let the wings cool. Once cooled, cover and keep in the fridge. To reheat, bake them for about 5 to 8 minutes at a 200 degrees C or 390 degrees F preheated oven. Make sure to evenly spread the wings on a tray.
SAUCES:
To make Honey Garlic Sauce, combine 4 tbsp honey with 2 tbsp soy sauce, 2 tsp white vinegar (except balsamic), and 2 to 3 tbsp garlic cloves (minced). You can use this for tossing or dipping.
For the Honey Mustard Sauce, whisk ¼ c. Dijon mustard, ¼ c. mayonnaise, ¼ c. honey.
Ranch Dipping Sauce: Combine 1/3 c. mayonnaise with 1/3 c. sour cream, 2 tbsp milk, 1 tsp lemon juice, 14 tsp each dried dill, parsley, chives, onion, and garlic powder. Season with salt & pepper.
If making Spicy creamy dipping sauce, mix ¾ c. mayo, half tsp garlic powder, 1/8 tsp paprika, 3 to 4 tbsp sriracha, salt, and pepper.
For the Pink Sauce, stir half a cup of mayo with 2 tbsp sweet chili sauce, 2 tbsp ketchup, 2 tsp garlic powder, and 1 tbsp sriracha (or other hot sauce).
