Vidalia Onion Pie

This is a classic Southern recipe that you can easily make at home. This pie is made with simple ingredients; Vidalia onions, crackers (Ritz or saltines), eggs, cheese, milk, and butter. Whip this up any time and have this ready in a cinch!

Ingredients

Pie Crust:

1/3 c. melted butter

2 1/2 c. crumbled crackers, Ritz or saltine crackers

Pie Filling:

2 1/2 c. thinly sliced Vidalia onions

2 tablespoons butter

3/4 c. milk

3/4 c. grated cheddar cheese

2 eggs

dash hot sauce

1/2 teaspoon dry parsley, optional

1/2 teaspoon salt

1/4 teaspoon black pepper

How to make Vidalia Onion Pie

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: Into the crumbled crackers, mix the melted butter until it has absorbed all the crackers. Into a 9-inch pie pan, evenly spread the mixture. To make a pie shell, press the mixture on the bottom and along the sides of the pan.

Step 3: In a skillet, melt 2 tbsp butter over medium-low heat. Once melted, add the sliced onions and saute for about 10 minutes or until tender.

Step 4: In the meantime, place the milk, eggs, salt, pepper, and hot sauce in a bowl. Mix well until blended.

Step 5: Evenly spread the onions on the cracker pie crust. On top, pour the egg mixture and sprinkle with the grated cheese and parsley.

Step 6: Place in the preheated oven and bake for about 40 minutes.

Step 7: Remove from the oven when done and allow the pie to cool for about 5 minutes.

Step 8: Slice the pie and serve. Enjoy!
