White Chicken Chili Crockpot Recipe

This is a very easy slow-cooker dinner idea that’s excellent for the entire family! This mouthwatering white chicken chili is also a great meal for game days or holiday parties. Ladle the white chicken chili into serving bowls and serve topped with your favorite toppings such as cheese, avocado, fresh cilantro, sour cream, salsa, and/or tortilla chips.

I love crock pot recipes because they are a time saver. I can begin cooking in the morning, and dinner is ready by the time the kids are home. This white chicken chili crock pot has been my family’s favorite for years. This is not only excellent to serve families, but also to feed a crowd!

INGREDIENTS

1 White Onion Diced

1 pound Chicken Breast

2 Cans of White Northern Beans

1 teaspoon Garlic Powder

1 teaspoon Cumin

1 teaspoon Chili Powder

1 Can of Whole Kernel Corn

1 10-ounces Can of Rotel

½ teaspoon Cayenne Pepper

1 8-ounce Block of Cream Cheese

¼ c. Half & Half or Heavy Cream

1–32 ounces Container of Chicken Broth

1 teaspoon Salt

1 teaspoon Black Pepper

Topping Ideas: Cheese, Avocado, Fresh Cilantro, Sour Cream, Salsa, & Tortilla Chips

How to make White Chicken Chili Crockpot

Step 1: Place the salt, pepper, cumin, chili powder, cayenne pepper, and garlic powder in a bowl. Mix well until blended.

Step 2: Into the bottom of a slow cooker, place the chicken breasts and sprinkle with the seasonings.

Step 3: On top, place the onion, drained beans, drained corn, and Rotel.

Step 4: To the slow cooker, add the whole container of the chicken broth.

Step 5: Put the lid on and set to cook for 6 to 8 hours on low or until the chicken can easily be shredded.

Step 6: Take the chicken out of the slow cooker and shred using forks.

Step 7: Place the shredded chicken back into the slow cooker, then stir in the cream cheese and half-and-half.

Step 8: Continue to cook on high for additional 15 minutes.

Step 9: Serve the white chicken chili right away with your preferred toppings. Enjoy!
