An Italian spin on a classic appetizer, these zucchini, garlic bites are made with shredded zucchini, garlic, Parmesan cheese, and fresh herbs and served with a marinara sauce for dipping.
I got to work cutting up some fresh herbs. When considering whether or not to add minced onion and garlic, I was concerned that they wouldn’t have time to soften before being added. To counteract the strong onion taste, I substituted grated garlic for the chopped chives and used a food processor to cut the chives. A touch of Parmesan cheese brought out a delicate nuttiness in the dish.
Quick and simple to prepare, these zucchini, garlic bites are best served with a traditional marinara sauce. Make sure to whip up a big batch because these are crazy delicious everyone will be fighting for the last piece!
INGREDIENTS
1 large egg, beaten
1 c. zucchini, grated
1/2 c. Parmesan cheese, freshly grated
2 tbsp fresh chives, minced
1 clove garlic, grated
1/3 c. breadcrumbs
1/2 tsp salt
1/2 tsp black pepper
1 tbsp fresh parsley, finely chopped
How to make Zucchini Garlic Bites
Prepare the oven. Preheat it to 400 degrees F. Using the parchment paper, line a rimmed baking sheet and set aside.
Grate the zucchini and place it on a clean towel. Then, bundle up the towel and squeeze out the extra moisture.
To a large bowl, transfer the squeezed zucchini. Add the garlic, egg, breadcrumbs, Parmesan, chives, parsley, salt, and pepper. Mix well until blended.
In tablespoon portions, scoop out the mixture and form it into balls.
On the prepared baking sheet, place the balls.
Place in the preheated oven and bake for about 15 to 18 minutes or until the zucchini garlic bites are golden brown.
Remove from the oven when done, and serve the bites with ranch or marinara sauce for dipping. Enjoy!
