Delicious, super easy to make, and healthy! These Zucchini-Parmesan Cheese Fritters are a delectable dish served with sour cream for dipping.

The kids would not mind the zucchini in these fritters. These fritters are seriously good they will devour it to the last piece!

To make this tasty snack, all you need are just a couple of pantry ingredients. Mix them and fry the batter until both sides are golden brown. I urge you to whip up a big batch. You would not want your kids or guests fighting for the last piece!

Ingredients

½ tsp salt

3 large zucchini, finely grated

Batter:

oil for frying

5 tbsp all-purpose flour

1 egg

4 tbsp Parmesan cheese

¼ tsp salt

ground black pepper to taste

Toppings:

¼ c. sour cream, for topping

1 tbsp grated Parmesan cheese, or to taste

How to make Zucchini-Parmesan Cheese Fritters

Step 1: In a bowl, mix the zucchini with salt. Keep aside for about 10 minutes.

Step 2: On a cheesecloth or clean dish towel, pour the mixture and squeeze to completely drain.

Step 3: In a bowl, beat the eggs. Then, add the flour along with the Parmesan cheese. Season with salt and pepper. Add the drained zucchini and stir well.

Step 4: In a medium-sized pan, heat the oil over medium-high heat. Once the oil is hot, add the batter by the tablespoon and cook for about 5 minutes on each side until golden brown. To a serving plate, transfer the cooked fritters and sprinkle with salt and Parmesan cheese.

Step 5: Serve the Zucchini-Parmesan Cheese Fritters right away with sour cream for dipping. Enjoy!
